iHop Pancakes Minus the White Flour!

If you like the fluffiness of iHop's traditional pancakes but can't stand the thought of putting loads of non-nutritive white flour into your body, then these pancakes are for you! And besides having lots of nutrients, they are SUPER EASY to make and so DELICIOUS. I got the recipe out of Sensible Cooking, a recipe book featuring the Bosch Universal Plus Kitchen Machine.

Wheat Blender Pancakes

Ingredients:
1 cup of wheat berries (this is not flour)
1.5 cups milk
1/3 cup oil (I use olive oil)
2 eggs
1 tsp. sea salt
1 Tbsp. honey (I use Agave Nectar)
1 Tbsp. baking powder

Put the wheat berries and 1 cup of the milk in a blender. Blend on high speed for 2 minutes. Add the final 1/2 cup of milk and blend on high speed for an additional 2 minutes. Add oil, eggs, sea salt and honey. (You can use honey, maple syrup, agave nectar or sugar.) Blend on high for 20 seconds. Add the baking powder and blend gently by jogging/pulsing the blender 5-6 times. Let this sit for one minute and then pour onto a preheated griddle or waffle iron.

Is that easy or what?! If you are unfamiliar with wheat berries, they are what wheat flour comes from before being milled. I know you can buy them at Whole Foods Market and at some HEB stores in the bins. I'm sure you can find them at any health food store and you can even order them online. I have large 25 lbs. containers of them because I use them to mill my own flour and then make bread. I recommend soft white wheat berries or hard white winter wheat berries. And if you are feeling very adventurous, I know you can mill your own flour at some of these stores and then store it in your freezer for using when you bake. It's so much more nutritious and flavorful than all-purpose white flour. Here's a photo of what you'll be looking for:


Here are some serving suggestions for the pancakes:
  • Top with fresh berries
  • Pure maple syrup
  • Peanut butter, flax seed oil, and a touch of agave nectar or maple syrup mixed together and then spread over the pancakes.
  • Plain Greek yogurt mixed with agave nectar (for a little sweetness) and then put on top like whipped cream
  • Sometimes I'll put a few chocolate chips inside each pancake. Jackson loves them this way.
  • A combo of any of the above!
I hope you love them as much as we do. Jackson inhales these pancakes. I've also made them with 1/2 cup wheat berries and 1/2 cup buckwheat groats or 1/2 cup wheat berries and 1/2 cup oat groats. (The groats are like the berries. They are not flour and they are not flakes. They are the entire grain. And you can buy them in the bins as well.)

Note: you cannot double this recipe. The batter will rise to fill almost the entire blender. If you want to double it, you'll need to make a second batch. This recipe makes about 15 pancakes. Freeze any leftovers, but I doubt you'll have any!

"Mama's Snoogle"

I have a quick story to share. Last night, I walked into Jackson's room to do our bedtime routine. Every night, we lye in the same spots on his bed while we read Bible stories and say prayers. My snoogle (my pregnancy pillow, which is saving my nights on an air mattress) was on his bed in my spot. Jackson was sitting on his bed inside my snoogle.

I said, "Are you laying on my snoogle?!"

He laughed and said, "Yes!"

Then I said, "Hey! That's my snoogle! Are you going to sleep curled up in it?"

His reply, "Yes!" with smiles.

Then Jason said, "I'm want to lay on Mama's snoogle!"

Jackson looked at him and said, "No. This is Mama's."

Jason started to pretend cry. Jackson thought it was funny but I convinced him that he should make sure that Daddy was okay. So Jackson went over to Jason, rubbed his shoulder, and said, "Are you okay, Dada?" They hugged and then Jason flipped Jackson over his head and into his spot on the bed. We all got into our spots and then Jackson looked at me and said, "I want Dada to cry again."

I said, "Oh no. You don't want Dada to cry again."

He looked at Jason and said, "Dada, cry again."

Jason said, "No. I don't like to cry."

I said, "Yeah, we don't like it when Dada cries. He was only pretending. If Dada really cries, then we'll be crying too."

Jackson insisted on Dada crying again, but we said no. Then Jackson looked at Jason, pointed to my snoogle, and said, "That's Mama's."

Time for Reflection

This is terrible! I started this post on 9 October. I then attempted to finish it on the 12th or 13th of November. That obviously didn't happen; however, I am so thankful that I still have the post. It's amazing to look at what Jackson was doing only months ago. It seems very outdated because he's changed so much since our move, but I have to document it anyway...for myself and because I know of some grandparents who will love reading it. It begins in November, back tracks to October, and then finishes off in November. Here goes:

Whirlwind. That's the best word I can use to describe the past three weeks of our life. It's been crazy and I haven't had a moment to stop and soak it all in. It's been a bit stressful, but I know Jace and I will look back on this in a few months and think it wasn't such a difficult time after all. There are still a lot of unknowns, but the Lord is in control and we know and trust that He will take care of us.

The busyness that comes with such a huge transition is one of the things that makes my heart hurt at night. My sweet boy is at an age when change happens every second. All I want to do right now is sit, watch him, and engrave every memory on my heart. As life would have it, this is a very busy time with a lot of things requiring my attention and not affording me the opportunity to thoroughly document all of the change. Thank the Lord for the blog. It does provide a way (and some motivation) for writing things down. And I have to write it down; otherwise, I will forget. He's not even two and I've already forgotten so many things. I hope the Lord will bring to remembrance things about my precious child.

I started a post back in early October about the things Jackson was doing or saying at that time. It's outdated, but there is no way I can't share it. I'll share that part first and then I'll update with some things he's currently doing.

Jackson,
My heart is so full. Every day with you brings greater joy and tons of laughter to my life. You are growing and changing so quickly. Often times, I can't believe my eyes, or my ears!, as I witness your development. It's impossible to keep a record of each new thing you do because you are constantly saying new words or mastering new skills. I wish I could remember it all because I love you so much and you amaze me every day.

I want to share with you some of the things that you are doing that make me and your Daddy smile. You still love your lawn mower. The Germans in our town are surprised that you like it even though it's not mowing season and mowers are summer toys. I find that funny since you are such a little boy. It's not like you know that toys are seasonal!

You have gained a lot of interest in your PUKY car. You love it whenever Daddy and I push you up and down our great wide hallway. You'll ask us to, "Tush!" It sounds so adorable and makes us laugh every time. You like to steer yourself and Daddy has taught you well. Sometimes, you think it's funny to crash into the wall whenever I'm pushing you, but the giggles that result are like music to my ears. During the day, you'll push yourself on the car and you'll wave bye-bye to me and say, "Bye-bye! Work!" You're going to work on your car just like Daddy!

Speaking of Daddy, you love Daddy! Everything great is Daddy's. Dada's car. Dada's wallet. Dada's food. Dada's drink. Dada's phone. Dada's money. (And money sounds like maime. It's one of our favorites!) I'm almost positive that the first form of possession you used was Dada's car.

You use possession with yourself as well. You never call yourself Jackson. You can say it, but not as easily or as well as Jack. You call yourself Jack. And if you want to do something by yourself, you tell me, "No, no. Jaaaack!"

You love to run fast. You'll ask us, "Fast?" Then, you squat down really low and say, "Ready." We finish it off with, "Set. Go." And then you yell, "Fast." Typically, you start moving before we get "Go!" out of our mouths.

Daddy taught you how to say, "Go Miami!" whenever we were watching the Hurricanes play football. The next weekend, we taught you how to say, "Go Texas!" You and Daddy both have Texas hats. You like it whenever you both wear them. One day, you were looking for something and you came up to me and said, "Texas hat." It's so amazing to watch you put words together and to witness your incredible memory.

At night, we always read out of your Bible. Daddy reads one story per night and you always request that he reads it two times. After we read, you like to flip through the pages to find pictures of the cats. You have recently enjoyed finding pictures of Jesus. One night, you exclaimed, "Yay, Jesus! Yay, Meow!"

I'm not sure why you love cats so much, but you do. Our neighbor Johann has several cats. You love to walk down the street to try to get a glimpse of them. They won't let you hold them, but you always ask me if you can. It's so sweet to witness. You put both hands right under your chest with your palms upward and your fingers pointing away from you and a little curled up. That is your way of asking to hold the cats. It's precious. You'll even do that at night whenever we look at your Bible. Daddy and I have to remind your that the cats in the book are only pictures and that we can't hold them.

You love to play in the water. Bath, sink or shower. It doesn't matter. You also like to floss! I can't believe it, but you let me floss your teeth. Then, I let you do it. It's great!

I love listening to you talk on the phone. You really like the phone. You love to tell people bye-bye over and over again. Other times, I'll catch you saying, "Yeah, yeah. Yeah, yeah, yeah...."

The list of things about you could go on and on. You are a marvelous little person. I'm so thrilled and thankful that I get to be your mommy. I wish I could remember everything because I want you to know someday what a remarkable little boy you were. I love you, Jacker-bear!

Oh, one more thing! You like to eat chunks of Parmesan cheese!

Now for the things that Jackson's doing in November!

His language has exploded! There is no better word to describe what's happening with his tongue. People tell you that it happens overnight, and that is no exaggeration. It practically does! I have to say that this might be my favorite stage of his life. I love being able to communicate with him. He was great at signing, and still uses some signs, but there is nothing like hearing that sweet voice as he tries to make new words.

I don't have a lot of time, so I'm just going to write about a few random things that he's been saying and doing that have caught me by surprise.

He still calls me Mama, primarily, but he has started calling me Mamia. I think this is because I sometimes call myself Mommy and he's putting the two words together. Jason thought this was funny and could not help but teach him to call me MamaMia, which I do not like! He doesn't say it very often, but I think he realizes that it's funny to his Daddy whenever he does call me MamaMia. That crazy Jace!

He loves to say, bye-bye, chius, and ciao. He will often say all three whenever he's pretend talking on the phone.

He's still extremely interested in vehicles, especially Jason's car. Jason came into our TLF (condo) room the other day and Jackson said to him, "Dada. Car off? Keys out? Open door? Lock car?" I couldn't believe my ears. He had the sequence down perfectly.

Whenever we were in the BX, he picked up baskets and started counting them, "One. Two. One. Two." I have never taught him how to count. I take the opportunity to count when he's around, like counting scoops whenever we're cooking, but I've never sat down with a book and tried to get him to count. It amazes me what he picks up on!

Jason has a Blackberry for work. Whenever he gets emails, there is a light on it that blinks red. Jackson loves Jason's phone. He loves to hold it and put it in and out of the case. One afternoon, Jason explained to Jackson that the light blinks whenever he has an email. Jason checks his Blackberry often because he's always hoping to get an email about his job situation. The other day, his Blackberry was sitting on the bedside table. Jackson saw it, took it to Jason, and said, "Check email!" It was one of those moments when you realize just how much children do understand and what they are paying attention to. Wow!

I am happy to report that Mommy is back on the map! We've had months of Dada being everything and Mama being nothing whenever Daddy's around. Well, he's started requesting Mama and as sad as this sounds, it's been a little reassuring.

One of my favorite things that he says is, "Jack, do it." He says this whenever he wants to do something by himself and it is so cute to hear because he really accentuates the 'do'.

When Jackson wants something, he exclaims, "I need that!" Jason assures me that he says this because I tell him, "Jackson, you don't need that." whenever he wants something that he cannot have. The other day, Jason had gone to take care of some moving stuff and Jackson was ready for him to be home. I told Jackson that Dada was at work, and he cried to me, "I need Dada!" It was absolutely precious!!

Jackson is a toothbrushing champ. We brush his teeth every night and he's so great about it. He has definitely gone through phases. At first, he didn't mind us brushing his teeth. Then, he went through a time where he wanted to resist almost every night. Now, he's back to loving it, and we usually brush for a full two minutes.

One afternoon, Jason was putting Jackson down for his nap. They were laying in his room in the TLF and I was doing something in the kitchen. Jackson wanted me to put him down for his nap so Jason was calling my name. I couldn't hear him because I had the water on, so he kept repeating himself. All of a sudden, I hear Jackson blurt out, "Adrienne! Babe!"

One of Jason's coworkers, Chris Carroll, seems to be the apple of Jackson's eye. He loves Chris. When we go to Jason's office, he always asks if he's going to, "See Chris?" and he looks for Chris once we're there. At Jason's farewell luncheon, Jackson kept wanting to get up from his seat to go see Chris. Whenever we went to dinner with Chris and his family, Jackson sat in Chris's lap for a long time. I mention this because he doesn't usually go to other people. He's still pretty much a Mama and Dada's boy, so the fact that he has such an affection for Chris is very noteworthy.

Once Jackson started showing an interest in wanting to feed himself, I let him have full control. I didn't worry about him making messes or getting dirty. I figured the best and easiest way for him to learn was doing it by himself with minimal interference from me. I have no idea if this made any difference, but now he eats almost perfectly with a fork and spoon. Almost everything makes it to his mouth. Occassionally, he'll turn his spoon before it reaches his mouth, but this usually happens whenever he's distracted by something else.

Meredith's Baby Shower

A few Saturdays ago - it was the 7th to be exact - we were in Houston for my younger sister's baby shower. Meredith is expecting her firstborn in early April and she is having a girl. This will be the first granddaughter in our family of four grandsons, so everyone is pretty excited.

Jason, Jackson and I left for Houston on Thursday afternoon. We stopped in Dallas to pick up a gift and some decorations from my cousin Amber. I haven't seen her, her husband Gabe, or her two children Hayden and Hailey since Jackson was three weeks old. It was wonderful to see her family. Our children played and we had a very quick time of catching up before we hit the road for the second leg of our drive.

We spent Friday with Jason's Mom. We went to the mall to buy me something to wear to the shower. All of my maternity clothes are in our household goods shipment, which we won't have until we move into our house in May!!! Although I'm not hugely pregnant, I'm too big for my pre-pregnancy clothes, especially since I didn't pack any of my larger clothes when we left Germany. (I didn't know that I was pregnant.)

Friday night, my parents watched Jackson while Jason and I had a wonderful sushi dinner with Ronald and Christy. (Christy is my brother's very wonderful girlfriend.) Jason and I enjoyed the opportunity to have some quality time as a couple. We never had a night out while we were living in Germany, so this was a wonderful treat!

Saturday was shower day. I spent the entire day preparing for, celebrating at, and cleaning up the shower. It was wonderful! I got to spend the whole day with my mom and sisters while Jason took Jackson over to his mom's during the day so that they could see Ryan and Megan. I should mention how much I love my husband. He is always thrilled to be with Jackson and I never have to worry about how much fun they'll be having while I'm off doing something else! It's fantastic!

Since Meredith now lives in Arkansas, she chose to have one large shower in Houston rather than a few small showers. We were expecting a lot of people, so we hosted her shower at Melissa's church. The hostesses (me, Melissa, Mom, and Danna) Danna is a friend of Meredith's from college. Christy also hosted the shower, but she got very sick that morning and didn't make it. Bummer! However, she did show up when it was time to clean up. Isn't that selfless?! It also appears that I either have a large bubble butt or white train on my dress. It's the tablecloth!

Before the shower, Melissa sent Ryan a list of questions that she wanted him to answer. At the shower, Meredith had to try and guess how Ryan answered. If you know Ryan, then you know he is very witty. Many of his answers had us in hysterics. For example, when asked what he would be doing while Meredith was in labor, he answered, "Updating her facebook status to 'in labor'!"

Meredith was showered with tons of wonderful gifts! I was the record keeper of everything she got and Melissa did a great job of displaying everything. It was so much fun!

Jason came towards the end of the shower. A lot of people were asking to see Jackson since they hadn't seen him since he was an infant. The shower was right in the middle of his naptime. He fell asleep about 10 minutes before they arrived and didn't even stir when Jason got him out of the car and brought him inside. Jason's mom was more than happy to hold her sleeping grandson. Isn't that a sweet photo?


Sunday, we packed our stuff and then headed to Conroe for my nephew's 7th birthday party. I'll have to save that post for later since my sweet one just woke from his nap.

Songs for Jackson

When Jackson was a baby, he loved to be sung to. He hated his car seat and car rides for the first 4 months of his life. Singing to him was one of the only ways to calm him down. I would sing all kinds of praise and worship songs. If you can believe it, I didn't really know any lullabies. I could hum the tunes to several, but I could not remember the words. Then there were lullabies that I remembered the words to, but would not dare sing them to my child (like Rock-a-bye Baby). I wanted to sing him lullabies, so I just made up my own words.

I don't want to forget these songs. They were so fun to sing and he loved them so much. Some of them I've made up since we've been back in Oklahoma because he still loves it when I sing to him. Here are the lullabies/songs that I can think of right now:

I think this is to the tune of Brahms Lullaby, but I'm not sure. It's from a tune that I heard on one of Jackson's toys that I got at one of my showers. I put words to this tune on our first walk into the Wittlich town center whenever we were living there for two months while waiting on our house in Germany:

When Jackson was a few months old, I put these words to it during diaper changes:

To My Valentine

Jace, I am so honored to share this life with you. I am so grateful for the love that the Lord has give us for one another. My heart has been so burdened lately as the Lord has graciously shown me the blessings we have.

We are together. Last year at this time, we weren't sure we'd be together in February 2009. There was a chance that you'd be in the Middle East and I would be in Germany or America.

We are healthy. Neither of us are (knowingly) staring death in the face. We aren't battling a major disease and we can go through each day with energy and stamina. We don't have any chronic illnesses and we're decently fit for people in their 30's!

We have our basic needs of food, clothing, and shelter, plus so much more. We eat like kings. We own nice clothes that are absent of holes, tears, and dirt. We have a roof over our heads even if it isn't the one we are going to call home. Yes, we're getting weary of our air mattresses, but how can we complain in light of everything above.

Baby, I can't imagine going through all of this without you. I can't imagine loving any other more than I love you. You are my best friend. You are an INCREDIBLE father. You are my encourager and you are so patient. You love so unselfishly. You are mine and I am yours! I can't wait to spend the day with you today!

Thanksgiving 2008

Things have been so hectic since our return back to the States, that I haven't had the time or the will to upload and organize photos and post things on my blog. I have missed it dearly and want to preserve our memories, so I'm going to be adding a lot of OLD posts. We'll see how much I get done!

We got back to America just in time to celebrate Thanksgiving with our families. We haven't been home for a Thanksgiving since 2005, so being in Houston with our families was a sweet treat! Since Jason and I got married, we have always celebrated Thanksgiving Day with one family and typically the day after with the other family. This year happened to be my parent's year and they opted for a big celebration. My mom's side of the family came over, and to make it even better, Jason's family and my brother-in-law's family came too. There were 44 people at my parent's house, which made it a very thankful day!

Jackson loves cars. Over Thanksgiving, he had a one-track mind. He wanted to get into everyone's cars. Megan had a rental, and Jackson thought it was the coolest thing ever. We couldn't get him out of the car to take a family photo, so we all jumped inside:

My parents are so awesome. They've been taking care of our cat since we moved to Germany. Jackson LOVES cats. We have no idea why, because he's been around both dogs and cats, but he's a cat lover. This works out great for us. As soon as we buy and move into our house, Sassy will be moving back up to Oklahoma.

You should have seen Jackson's excitement when he was introduced to Sassy. He loved her! He would go around the house yelling, "Sassy! Are you?" (As in, "Where are you?") Well, she loves to lounge in my dad's closet. Jackson quickly caught on to her favorite spot, and would often go looking for her. One night over Thanksgiving weekend, he was with my mom in their bathroom and we caught these two shots:


The day after Thanksgiving, Meredith and I took the cousins to play at this great playground in my parent's neighborhood. They had a blast:



Thanksgiving was very special this year. We really enjoyed being with our families after being gone for 15 months in Germany.

A Great Adventure

(I am just now posting this today, 10 Feb 09, but our 10th anniversary was on 9 Jan 09. I lost the slideshow and had to redo it 3 times. This is a great memory for our family, and this post is for me to document our first 10 years.)

The first long talk that Jason and I ever had...before his heart met mine...occurred in his Jeep Wrangler while sitting in my driveway. We talked for hours about all sorts of things, but I will never forget his mentioning of Stephen Curtis Chapman's song to his wife, I Will Be Here. I was a very new believer and still unfamiliar with Christian artists. I can't remember how quickly, but very soon after that conversation, I was searching for the CD containing this song. I found Chapman's The Live Adventure CD and it ministered to me more than I ever imagined it would. Of course, I loved the song written for his wife. In fact, we both loved it so much that we had a dear friend sing it while we lit the unity candle during our wedding ceremony.

The Great Adventure, the title track, was a song that carried me through the next few months of waiting for the Lord to reveal His chosen life partner for me. You see, I met Jason in July 1997. A week later, he went to Kanakuk for one month. After returning to Houston from Kanakuk, he left for his senior year at Baylor. I felt certain in my heart that he was the one I wanted to spend the rest of my life with; however, I was waiting for him to make the first move. Over the next four months, I devoted my heart to prayer and to growing in the Lord...to learning about THE great adventure. When Jason came home for Christmas break, he pursued me and we knew very soon thereafter that we wanted to spend the rest of our lives together.

At that time, I had no idea what an amazing adventure it would be. The past 10 years have been more than I had ever hoped for.
